My guests and I cook in my own 500 year old kitchen and cooking with me is like cooking with a friend. It is a totally hand-on programme where my guests and I create a full, authentic Italian meal we will eat all together in our dining room by the fireplace.
We focus on a selection of Italian main recipes: puff pastry and pate brisée, all sorts of homemade pasta, risotto, gnocchi, bread, focaccia, quiche, and cakes.
I like and use strictly 100% Italian extra virgin olive oil, soft and rich butter, coarse salt, Maldon salt, organic lemons from Amalfi, my own aromatic herbs: rosemary, sage, thyme, bay leafs, mint, parsley, basil.
In our two hour hands-on cookery classes, we make entrées or focaccia and bread, top notch tagliatelle from scratch or garganelli or gnocchi, a sauce and a dessert.
We all work in my kitchen using wood boards, ceramic knives, chopping boards, each guest receives an apron and a rolling pin and our worktops accommodate max. 6 people to work together.
I only use locally sourced ingredients, all spices and aromatic herbs come from my own garden, fruit and vegetables from our friends' orchard or from the farmers' market.
