Biga (fresh yeast fermentation)

Ingredients:

20 gr of fresh yeast

1 teaspoon of sugar

1 teaspoon of flour

1 teaspoon of water


How to procede:

Crumble the fresh yeast in a small bowl.

Add 1 teaspoon of flour, 1 teaspoon of sugar and 1 teaspoon of lukewarm water.

Mix very nicely to obtain a smooth paste.

Cover with some flour.

Put in the oven with the light on for 30 minutes or more, depending on outside temperature.

In summer it takes only 30 minutes, in winter it may take one hour.

Use it when you see it is fermenting and making bubbles as in the picture.

Use as you would use dry yeast, it works much better and bread will be much lighter.
